CHILI, TOMATO AND GARLIC PASTA WITH TUNA



Ingredients

spaghetti (as needed)

medium can tuna in oil

1 onion, chopped

1 clove garlic, crushed

1 can crushed tomatoes

1/2 cup orange juice

10 olives, pitted, cut in half

1 tablespoon finely grated orange zest

cracked black pepper, to taste

1/2 cup parsley

Directions

1. Bring a large pan of water to the boil and cook your choice of pasta until al dente (cooked but still slightly firm). As soon as it is cooked, drain the pasta and set aside.

2. Drain the tuna over a large frypan to catch the juices. Add the onion and cook, stirring, over a medium to high heat until softened, 4 to 5 minutes.

3. Add the garlic and cook for 1 more minute.

4. Add the tomatoes and orange juice and simmer the mixture for 3 minutes. Stir through the tuna, olives and orange zest, and cook for 1 more minute.

5. Season with the pepper and immediately toss through the cooked pasta, or serve separately with sauce spooned on top.

Time Saver Dessert-Caramel Apple Crunch


Ingredients:
1 1/2 cup granola cereal plain or flavored
8 caramel candy squares
1 cup applesauce chunky-style
whipped topping(or icecream)
Directions
Preheat oven to 350°. Grease an 8 x 8 x 2-inch baking pan or spray with non-stick coating. Spread granola evenly in pan; set aside.
Unwrap caramels. Place on a cutting board and cut into quarters with a heavy knife. Sprinkle over granola. Bake for 10 minutes or until caramel pieces are very soft. Remove from oven.
Stir granola and caramels to coat granola. Add applesauce and mix well.
Spoon apple mixture into dessert dishes. Serve hot or at room temperature with whipped topping.
Serves 4

Time Saver-No Pastry Quiche



Ingredients

6-8 eggs

1/4 cup cream

1/4 cup corn kernels

1 cup chopped bacon rashers

1/2 cup onions roughly chopped

1/4 cup shredded cheese

Four slices tomatoes

Directions

Beat the eggs in a bowl, add cream. Place in bowl corn kernels, chopped bacon, onions.

Pour contents into oven proof dish, sprinkle with shredded cheese, lay sliced tomatoes on top. Cook as to your preference. Cooked through or slightly soft in centre.
Enjoy!

Chocolate Cake



Ingredients

2 Cups of Sugar

2 Cups of Flour

2 Sticks of Butter

4 TBS Hersheys Cocoa

1 Cups of Water

1 TSP Cinnamon

1 TSP Vanilla

1 TSP Baking Soda dissovled in a 1/2 cup of buttermilk

2 eggs

Directions

Sift sugar, flour, and Cinnamon.

Bring butter, cocoa, and water to a boil pour over dry ingredients mix well. Add buttermilk soda mix, eggs and vanilla. mix well.

Batter will be rather thin bake in a 11x16 inch greased pan with sides for 20 minutes @ 400 degrees.

Ingredients for cake Icing

1 stick butter

4 TBS cocoa

6 TBS Milk

1 box of powdered sugar

1 TSP vanilla

Directions for Icing

Bring butter, cocoa, and milk to a boil add powdered sugar, and vanilla beat well. spread over cake while cake and icing are still hot if icing is to stiff add a few drops of milk.

Beef In Beer



Ingredients

800g chuck steak cut in chunks
2 onion thinly sliced
potatoes (as needed)
butter (nob)
3 sprigs thyme
Brussel sprouts(as needed)
Small bottle of guinness (or dark beer)
2 table spoons tomato paste
Olive oil

Directions

Preheat oven to 150 degrees Celsius. Fry onions in a little oil in a casserole dish with a lid until soft. Remove from pan.

Brown the meat well in batches. Add back the onions, pour in the beer, add the sprigs of thyme, sprinkle with pepper and add the tomato paste. Bring to the boil. Transfer to the oven and bake for one and a half hours.

Near serving time boil the potatoes. Once boiled mash the potatoes adding salt, pepper and butter. At the same time boil or steam brussel sprouts.

Food Glorious Food



The enjoyment of food is one of the joy's of life. Let us not fool ourselves we all enjoy delicious delights though there are many nutritionists who try and instill a fear of food in order that we will eat less. This has merit but it is not food that is making a whole generation overweight it is the portion sizes that we are eating.

We are eating more and exercising less in this age of technology as we become more and more sedentary in our everyday lives. It is this very inactivity that must change along with how much food we are consuming in a day.

We are told in various magazines to eat six or eight small meals a day, while other magazines say we should eat three well balanced meals a day. This can be confusing for who is right? Do we begin eating six meals or three meals?

What is needed is a sense of balance mixed with common sense. To deprive ourselves and our families of delicious foods is wrong, for instance there is nothing wrong with eating desserts so long as it is done sensibly. We do this by remembering that we are filling our stomachs and not our entire body content, so make sure that the portion size reflects this.

One of the ways to achieve this is to place our food on plates or bowls that are smaller, rather than grab the biggest plate and load it up. As an example when it comes to dessert, no matter what it is one dollop of cream or one scoop of ice-cream over fruit or puddings will not lead you to become excessively obese. It is overeating that leads to obesity NOT simple eating.

Because nearly everybody loves their food especially the most deliciously wicked delights do not deprive yourself of them but to remember that what you eat will have to be worked off.

Exercise need not be a joyless endeavor, it can be fun. Who made the rules when it comes to exercise? If you are a mother of young girls then when you finish your evening meal go outside in your yard and play with them. Remember the hoola hoop, hop scotch or a skipping rope? Age should be no barrier to good old fashioned fun for a half hour or so jump around with real exuberance and have a laugh. Then of course there's such things as baseball or basketball and if you have a trampoline even better.

In this way we end up having the best of both worlds, we are enjoying our food without feelings of guilt as well as gaining the exercise our bodies need to work off those delectable treats.

In all things moderation is the keyword, enjoy all food in moderation. This way you and your family will be living life to the full while enjoying the fruits of your labor which can be found in food and good old fashioned family fun.

Embrace life, eat well and most importantly keep a spirit of fun and exuberance.

Inspirational Humour


A sense of humor... is needed armor. Joy in one's heart and some laughter on one's lips is a sign that the person down deep has a pretty good grasp of life.

Lemon Spaghetti


Ingredients

Salt

1 pound spaghetti

3 tablespoons extra-virgin olive oil, 3 turns of the pan

4 cloves garlic, finely chopped

1/2 teaspoon crushed red pepper flakes

2 lemons, zested and juiced

1/2 to 3/4 cup heavy cream

1 cup grated Parmigiano Reggiano

Handful flat-leaf parsley, finely chopped

1/2 cup (10 or 12 leaves) fresh basil, very thinly sliced
Directions

Bring a large pot of water to a boil. Salt the water and drop the spaghetti into the pot.
Heat a large deep skillet over low heat. Add extra-virgin olive oil and garlic and crushed red pepper flakes.

When the pasta has been cooking about 5 minutes, add lemon juice, a ladle of the cooking water from the pasta and 1 cup of cream to the garlic and oil. Raise heat a bit to bring sauce to a bubble.

Drain pasta when it still has a good bite to it, al dente. Add lemon zest and half of the cheese to the cream sauce. Season the sauce with salt, to taste. Add pasta to pan and turn off heat. Toss the pasta with sauce a minute or 2, allowing it time to soak up the sauce.

Top the plates of pasta or platter with remaining cheese, parsley and basil.
