Broad bean and Bacon Salad



Ingredients

2lb broad beans(in their pods)

4 rashers bacon, finely diced

4 1/2 tbsp olive oil

2 tomatoes, skinned and de-seeded

1 shallot, peeled

1/2 tsp french mustard

1tbsp white wine vinegar

1 garlic clove, peeled

1 tbsp chopped mixed fresh parsley, chervil and tarragon

Handful mixed salad leaves to serve

Directions

remove beans from their pods, plunge into boiling salted water and simmer for 10 minutes or until tender. Fry bacon in oil until brown and crisp, add crushed garlic. Remove from heat. Dice the tomato flesh and finely chop the shallot. In a bowl, mix the tomatoes and shallot with the mustard, followed by white wine vinegar. Toss and put in a serving bowl with the tomato and mustard mixture. Add the remaining olive oil, beans and herbs. Mix and season with salt and freshly ground pepper. Leave for 20 minutes to marinate and cool.

Serve on a bed of fresh mixed salad leaves. Finish with more ground pepper.

Angel Food Cake with Berries and Whipped Cream



Ingredients

1 pint blueberries

1 pint raspberries

2 tablespoons sugar

1 angel food cake, store bought

1 container whipped cream, canister

Directions

Combine berries. Sugar berries. Let stand up to 30 minutes. Serve with sliced angel food cake and whipped cream.

Time Saver Salmon Recipe



Ingredients:

Heat 2 Tbsp butter until melted and then take off heat
then add

1 tsp worchestershire sauce

1 tsp lemon juice

2 tsp of dill

Directions:

Brush a salmon filet or 2 salmon steaks with the sauce and then place on a broiler pan that has been coated with oil.

Broil for about 10 minutes at 450 degrees being careful not to overcook the salmon.

Eat with steamed vegetables of choice.

The Great Aussie Burger



Ingredients

Burger bun

1 beef patty

1 onion

beetroot (optional)

1 slice cheese

1 tomato

chopped lettuce

1 egg

mayonaise

Tomato sauce (ketchup)

Directions

Place beef patty on grill, or pan on stove top. Slice the onion to suit taste. Fry the onion and egg in oil till the egg is well done. Remove beef patty, onion and egg from stove or grill. Place beef patty, slice of cheese, cooked onion and egg on the sliced burger bun. Add slices of tomato, one slice of beetroot top with lettuce and add the mayonaise and tomato sauce(ketchup) to taste. Warm up the top of the burger bun for a few seconds then place on top of burger.
Repeat recipe for every burger.

Eat with salad or fries.

JULIENNE VEGETABLE SALAD WITH LEMON VINAIGRETTE


Time Saver Salad

FOR THE SALAD:
3 carrots, cut in julienne strips
4 oz. green beans in 1 inch lengths
3 sticks of celery, cut in julienne strips
Salt and freshly ground pepper

FOR THE LEMON VINAIGRETTE:
1 Tbsp. olive or walnut oil
4 Tbsp. lemon juice
2 Tbsp. fresh chives
1 garlic clove, chopped

Directions
In bowl, combine carrot, green beans and celery; set aside.
For the Lemon Vinaigrette, in small bowl, combine oil, lemon juice, chives, and garlic; mix thoroughly. Pour over vegetables and toss to mix. Add salt and pepper to taste.
Cover and refrigerate until serving.
Enjoy!
